Ingredients
Scale
1 cup crushed Oreo cookies (about 10-12 cookies)
3 tablespoons unsalted butter, melted
2 (8 ounce) packages cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 1/2 cups heavy whipping cream, cold
1/2 cup chopped Oreo cookies, for topping
Instructions
In a small bowl, mix the crushed Oreo cookies and melted butter. Press this mixture evenly into the bottom of an 8-inch springform pan.
In a large bowl, beat the softened cream cheese and granulated sugar until smooth. Stir in the vanilla extract.
In a separate bowl, whip the cold heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until well combined.
Pour the cheesecake filling over the Oreo crust and spread evenly.
Chill the cheesecake in the refrigerator for at least 4 hours, or until firm.
Before serving, sprinkle the chopped Oreo cookies over the top of the cheesecake.
Notes
For a smoother crust, you can pulse the Oreo cookies in a food processor.
Ensure your cream cheese is fully softened to avoid lumps in your filling.
Chill time is crucial for the cheesecake to set properly.
