1 cup rolled oats
1 cup creamy peanut butter
1/2 cup unsalted butter, melted
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
2 tablespoons coconut oil
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
In a large bowl, combine the rolled oats, peanut butter, melted butter, powdered sugar, and vanilla extract. Mix until fully combined and the mixture holds together when pressed.
Press the oat mixture evenly into the prepared pan. Use the bottom of a glass or measuring cup to flatten the surface.
In a small, microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each, until smooth and fully melted.
Pour the melted chocolate mixture over the oat base. Spread it evenly to cover the entire surface.
Refrigerate the bars for at least 2 hours, or until the chocolate topping is firm.
Use the parchment paper overhang to lift the bars from the pan. Cut into 16 squares before serving.
Notes
For easier cutting, place the pan in the freezer for 15 minutes before slicing.
If you prefer a firmer bar, you can freeze the finished bars and serve them directly from the freezer.
You can substitute almond butter for peanut butter if you have a preference.
